Apricot and Orange Fool with Pistachios

1 cup whole dried apricots
OJ
1 cup firm or silken tofu, drained and broken up
.5c creamer (soy esp.)
cardamom
2 T. pistachio nuts - shelled and chopped

Soak the apricots in OJ for several hours, overnight if possible. Process to a paste. Add tofu, creamer, and cardamom, process again to make a cream. Spoon into glasses and sprinkle with nuts.
