2 large onions
1 large eggplant
3 potatoes or sweet potatoes
2 red peppers
3 zucchini
1 head of garlic - cloves peeled and left whole!
chopped bunch of flat-leaf parsley
salt and pepper
6-7 T. olive oil
2 c. canned chopped tomatoes
Cut all veggies into chunks. Place into shallow oven dish with garlic and parsley, smooth into flat layer. Sprinkle with salt and pepper, pour oil over and top with tomatoes. Season again with salt and pepper. Bake uncovered at 325 for 2-3 hours.
