Dried Fruit Compote

.5c each of anything dried: figs, apricots, peaches, dates, yellow raisins, prunes - 2 c. total
Water or juice to cover
4 T. almonds or pistachios, cut up

Wash the fruit and put in a bowl. QUICK PREP: Cover with water for a few hours, then simmer 20-30 min. LONG PREP: Cover with juice overnight, up to 24 hours. Serve warm or cold, with nuts mixed in or on top, with cream, ice cream or yogurt.
