Spinach Curry

1 onion chopped
1T canola oil
2 garlic cloves, crushed
1T ginger, grated
1t turmeric
1t coriander
4c spinach leaves
salt and pepper

Saute onion in oil in large pan for 10 min, covered, til onion is tender. Add garlic, ginger, turmeric, and coriander. Stir for a few seconds over heat, then add spinach and stir to coat with spices. Cover, then cook over med heat for 10 min, until spinach is soft. Season.
