Serve with Hummus and pasta. Can make with just one of the veggies if desired.
1-2 zucchini, halved or quartered lengthwise and cut into 2 inch lengths
1 red onion, peeled and cut in sixths
1 eggplant, cut in chunks
1 T. olive oil
salt
1 T. lemon juice
2 peppers, one red one yellow, in strips
12 black olives, basil, and pepper to taste
Heat broiler to high. Put zucchini, onion, and eggplant onto metal broiler sheet, brush with olive oil, lemon juice, and sprinkle with salt. Move and turn to cover completely and have space to cook evenly.Then add bell peppers. Broil 20 min, until veggies are tender and browned slightly, turning after 10 min. Stir in black olives and sprinkle basil and pepper.
