ROAST POTATOES

Preheat oven to 450, Peel potatoes and cut into pieces. Put in saucepan, cover with water, bring to boil, cover, and cook 8 min. Should soften slightly. Drain, shake potatoes in pan to roughen edges to help brown. Heat thin layer of canola oil in roasting pan in oven. Tip potatoes into pan and turn quickly so they will be coated in oil. Return to oven for 45-60 min, or until crisp. Turn once or twice in oven.
